I originally created a video for Sheet Pan Bratwurst, Potatoes and Veggies. It's been a big hit on Instagram and Facebook. I've seen several people already make this recipe and share their photos! I had to share this recipe on the blog as it's been the most recreated recipe that I've shared. People are loving how easy it is to make and how tasty! I love that it can all be made on one pan and baked together for a full meal!
Why Make Sheet Pan Bratwurst, Potatoes and Veggies?
I love really good tasting food. This Sheet Pan Bratwurst, Potatoes and Veggies is a super simple dish that can be prepared in under 10 minutes then popped into the oven to bake for 40-50 minutes. This recipe requires minimal ingredients and uses items you'll most likely already have on hand, like olive oil, garlic, salt and chopped onion.

Ingredients Needed for this Dish
The list of ingredients for this sheet pan meal are very simple and many adjustments can be made.
- Bratwurst - I typically use the original or beer brats. You can also use Italian sausage or spicy Italian sausages. This recipe is using uncooked sausage.
- Potatoes - You can use any style of potatoes. I used red potatoes for this example, you can also use russet, gold, or any other variety.
- Bell Peppers - Red, yellow or green will work just fine.
- Onion - Yellow or white onion is best.
- Garlic - Add chopped fresh garlic or minced garlic.
- Oil - Olive oil, avocado or coconut oil will work well. You can also substitute butter if you prefer.
- Salt - Any preferred salt and additional seasonings can be added.
- Additional Veggies - I added carrots here. I've also used tomatoes, squash, corn, zucchini or Brussels sprouts would be good.

How To Make Brats and Veggies
First thing first, preheat the oven to 400F. Then grab a cookie sheet or sheet pan and line it with parchment paper or foil. If you don't have any that's fine too! Then slice potatoes and cut up the bell peppers. If you have any other veggies on hand, like carrots, zucchini or corn, you can add that in too.
Place the veggies on the parchment paper, then paint on the olive oil. Sprinkle on the salt, garlic and chopped onion. You can use fresh onion, onion powder or chopped onion.

Then separate the veggies to make space to place each bratwurst in between the veggies. Pop it in the oven for about 40-50 minutes or until the potatoes start to look crispy on the edges. Watch the video for a step by step below the recipe!

Sheet Pan Bratwurst, Potatoes and Veggies
This Sheet Pan Bratwurst, Potatoes and Veggies is a big hit. It's an easy to make, one pan dish that will satisfy all your dinner needs!
Ingredients
- 7 Small Red Potatoes (or 2-3 russet)
- 4-7 Bratwurst
- 1 Bell Pepper
- Baby Carrots (Optional, can add extra veggies)
- 2-3 Tablespoons of Olive Oil
- 1 Tablespoon of Chopped Onion (Raw or powder)
- 1 Tablespoon of Garlic
- Salt to taste
Instructions
- Preheat oven to 400F
- Line Sheet Pan with Parchment Paper
- Slice Potatoes and Chop Veggies
- Add Olive oil, salt, chopped onion and garlic and combine
- Add brats in between veggies
- Cook for 40-50 minutes

Yes! Since the bratwurst and the veggies will be cooking at the same time in the oven, they will all cook together.
Be sure to slice through your bratwurst to make sure it is cooked through. There will be little to no pink on the inside once cooked. If it's still too pink, continue cooking. Bratwurst will brown on the edges once cooked but if it's cooked at too high of heat, it will look cooked on the outside and not all the way through.
Sheet Pan Brats with veggies is a super easy and delicious recipe to make with Bratwurst. You can also substitute Italian sausages.

I added golden beets split in half, also carrots split lengthwise and I used baby red potatoes, two yellow onions cut into wedges along with the one bell pepper wish I'd added two. A little broth in the bottom and covered tightly with foil to steam, the beets and potatoes take longer to cook, especially the beets so I went an hour and started checking for doneness in the root vegetables. Oh and I did two packs of brats along with four cloves of fresh garlic. Really great meal.
