This No Bake Chocolate Cheesecake Recipe is so delicious and makes for a refreshing, yet decadent dessert. With minimal ingredients and time, this dish comes together very easily!

Ingredients in No Bake Chocolate Cheesecake
This recipe has very minimal ingredients and is super tasty!
- Cream Cheese - 2 Packages works best
- Powdered Sugar - This sugar will blend into the cream cheese well
- Vanilla Extract
- Sour Cream - This adds an element of tang and smoothness
- Dark Chocolate - You can use milk chocolate if you prefer but dark pairs really well with the cream cheese
- Graham Cracker Crust - I used store bought for this simple recipe. You can make a crust of butter, sugar and graham crackers if you prefer.
- Raspberries - To garnish on top! This brings a fresh taste that brings out the flavors of the dark chocolate.
- Whipping Cream - (Optional) Many recipes also include whipping cream (whipped and folded into the pie) and you can definitely add some if desired. I honestly did not have any on hand and it turned out just fine without it.

How to Make a No-Bake Chocolate Cheesecake
First, start by adding your room temperature cream cheese to a stand mixer and blend till fluffy, about 7 minutes. Fold in your powdered sugar, then the vanilla.

Prepare the Chocolate
Next, you want to break up your chocolate bar and melt it. I did 30 second increments in the microwave, stirring occasionally till melted through.

Combine Ingredients
Once the chocolate is melted, add it to the stand mixer. Blend until combined.

Then add the sour cream and blend until combined.

Pour the chocolate cheesecake into the graham cracker crust and smooth the top with a spatula.

Finish the Dessert
Once the cheesecake is in the pie crust, you can garnish the top of the pie with raspberries. Place each raspberry about an inch apart along the edge of the pie tin.

Refrigerate Your Cheesecake
Next, you want to refrigerate your cheesecake for about 2-3 hours before serving. It gives the pie a chance to come together and firm up. Grab the full recipe below!

- 16 oz Cream Cheese, room temperature
- 1 Cup of Powdered Sugar
- ½ Cup of Sour Cream
- 4.4 Oz. Dark Chocolate Bar
- 1 Graham Cracker Crust
- ½ Cup of Raspberries
Instructions
- Add cream cheese to a stand mixer and blend on medium speed till fluffy, about 7 minutes.
- Fold in powdered sugar and blend.
- Add the the vanilla and blend.
- Break up your chocolate bar and place into a glass bowl. Melt in the microwave at 30 second increments, stirring occasionally till melted through.
- Once the chocolate is melted, add it to the cream cheese mixture. Blend until combined.
- Add the sour cream and blend until combined.
- Pour the chocolate cheesecake into the graham cracker crust and smooth the top with a spatula.
- Garnish the top of the pie with raspberries. Place each raspberry about an inch apart along the edge of the pie tin.
- Refrigerate the cheesecake for about 2-3 hours before serving.
