You guys, I had to try the viral Yogurt Cheesecake and make my own spin on it and let me tell you, it is so good! I used the tiniest chocolate chip cookies from Trader Joes and dipped them in cold brew to make this delicious easy cheesecake!

What is Yogurt Cheesecake?
This trend started as a two ingredient Japanese yogurt cheesecake on social media and is a no-bake dessert made from Greek yogurt and cookies. It's such a simple but tasty dish that you can vary with many different ingredients.

Ingredients in Yogurt Cheesecake
The ingredients are simple, greek yogurt and cookies. As you can imagine, there are many varieties that you could make with this. I went for a coffee and cookies spin because I thought it sounded the best!
- Greek Yogurt - I like the vanilla greek yogurt for this dish because it is already a tasty and rich yogurt
- Cookies - I used small chocolate chip cookies, but biscoff is very popular for this dish
- Coffee (Optional) - I used a can of cold brew but you can use regular brewed coffee or omit all together. The coffee will still be soft after soaking in the yogurt. The coffee just adds a bit more flavor, and fun!

How to Make Yogurt Cheesecake
To make this simple dish, pour your yogurt into a small dish. You could also leave it right in the container if you prefer. Then add cookies to the yogurt.
Since I also used coffee, I made this 2 ways to test it and both turned out great. I added the coffee soaked cookies to the bottom of one dish and only pressed into the yogurt for a second dish.

Let the dish come together in the fridge for 4-8 hours. The cookies really get soft and soak up the yogurt and coffee flavor after sitting.
