If you've never tried Jalapeno Cornbread Muffins with Whipped Honey Butter, now is the time! Cornbread is an excellent and easy dish to bring to a BBQ or potluck. I love enjoying these muffins with our white chicken chili or the Kids Fav Chili! I've always loved moist cornbread with green chilies and corn on the inside. I also added a pickled jalapeño to the top of each muffin for some added heat. We first had whipped honey butter at Marie Callender's when I was a kid and have always loved that flavor. The Best Type of Cornbread
There's this thing about cornbread - I either love it or don't like it at all. I've tried so many that turn out really dry and that's just not tasty IMHO. Some mixes also have a strange after taste. I love that Jiffy mix has a great taste and is even better with the added corn + green chilies. The pickled jalapeño on top really adds a punch of flavor in this recipe. It is even better with the whipped honey butter. I made a little extra the first time around and used the leftovers on biscuits all week. So yum!
Jalapeno Cornbread Muffins
We are really looking forward to warm days and poolside BBQ's this summer. Jalapeño cornbread muffins are an awesome dish to bring since they are ready to go. The kids love to grab and go and will dip a piece in the butter if they want. Aside from Chili, cornbread muffins go excellent with brisket, Tri-Tip, chicken, brats and soups.
Jalapeno Cornbread with Whipped Honey Butter
Ingredients
- Cornbread Muffins
- 2 Boxes Jiffy Cornbread Mix
- 2 Eggs
- ⅔ Cup of Milk
- 1 Small Can of Green Chilies
- ½ Can of Corn
- Pickled Jalapeños
- 1 Jalapeno Sliced Thin
- ½ Cup of White Vinegar
- 1 Tablespoon of Sugar
- ½ Tablespoon of Salt
- Whipped Honey Butter
- 1 Stick of Butter
- 2 Tablespoons of Honey
Instructions
- Preheat Oven to 400F.
- Grease Muffin tins with Butter.
- Combine Jiffy Cornbread Mix, Eggs, Milk, Green Chilies and Corn.
- Bake at 400 for 15 Minutes.
- Pickled Jalapeños
- 1 Jalapeno Sliced Thin
- Boil White Vinegar with Sugar and Salt then let cool.
- Combine jalapeños with vinegar mixture.
- Refrigerate for at least one hour.
- Whipped Honey Butter
- Whip Butter and Honey in mixer until fluffy.
