Jalapeno Cornbread with Whipped Honey Butter

We were invited to a BBQ over the weekend and I was asked to bring a side dish. I heard the main dish would be brisket and that salads were already covered. I figured cornbread would be a great addition to a fun summertime BBQ. I’ve always loved that moist cornbread with green chilies and corn on the inside but I had never actually made it myself. I figured I might as well try it and it turned out pretty darn good. I also added a pickled jalapeño to the top of each muffin for some added heat. We used to get together with friends every weekend but since having kiddos everyone’s schedule has completely changed. It seems as if we are all getting back into some sort of rhythm where we end up getting together more often which is absolutely amazing for everyone. I love that I have friends who appreciate good food and enjoy the craft of making something delicious. It makes it that much more fun to make food from scratch or semi-homemade like this recipe.

Over the long weekend we went to 29 palms for some off-roading, family fun! We finished off the weekend at our friends house on Memorial Day with an early summer BBQ. The food was awesome! Our friends recently got a smoker and have been trying out different recipes. We enjoyed a brisket that was smoked for 13 hours! Alongside were these tasty jalapeño corn muffins, potato salad, garden salad and even some chili relleno casserole.

There’s this thing about cornbread – I either love it or don’t like it at all. I’ve tried other mixes that have a strange after taste. The Jiffy mix has a great taste and is even better with the added corn + green chilies. The pickled jalapeño on top really adds a punch of flavor. It is even better with the whipped honey butter. I made a little extra the first time around and have been using the leftovers on biscuits all week. So yum!

Jalapeno Cornbread with Whipped Honey Butter


  • Cornbread Muffins
  • 2 Boxes Jiffy Cornbread Mix
  • 2 Eggs
  • 2/3 Cup of Milk
  • 1 Small Can of Green Chilies
  • 1/2 Can of Corn
  • Pickled Jalapeños
  • 1 Jalapeno Sliced Thin
  • 1/2 Cup of White Vinegar
  • 1 Tablespoon of Sugar
  • 1/2 Tablespoon of Salt
  • Whipped Honey Butter
  • 1 Stick of Butter
  • 2 Tablespoons of Honey


  1. Preheat Oven to 400F.
  2. Grease Muffin tins with Butter.
  3. Combine Jiffy Cornbread Mix, Eggs, Milk, Green Chilies and Corn.
  4. Bake at 400 for 15 Minutes.
  5. Pickled Jalapeños
  6. 1 Jalapeno Sliced Thin
  7. Boil White Vinegar with Sugar and Salt then let cool.
  8. Combine jalapeños with vinegar mixture.
  9. Refrigerate for at least one hour.
  10. Whipped Honey Butter
  11. Whip Butter and Honey in mixer until fluffy.
