I found my new favorite everyday salad! This Everything Avocado, Cranberry & Goat Cheese Spinach Salad with Orange Honey Mustard Vinaigrette is where it’s at! This salad is awesome for any day of the week. It can be made as a meal or as a side dish. It’s a super tasty salad to have in the fridge for the whole week too! I just keep the dry ingredients in little jars next to the tub of spinach. You can make this homemade Orange Honey Mustard Vinaigrette for the week or use a store bought dressing. Everything Avocado, Cranberry & Goat Cheese Spinach Salad
We all know it’s been a year. My healthy eating habits had fallen off the rails for a while there and I’m ready to bring more healthy foods into my everyday meals. This everything avocado, cranberry & goat cheese spinach salad is just what I need to get more greens in my life. I love the flavor combo with the citrus in the dressing, the creaminess in the avocado and the richness in the goat cheese.
Orange Honey Mustard Vinaigrette
I love making a quick and easy vinaigrette, especially with citrus. It makes a salad pop with flavor! This one simply combines olive oil, deli mustard, honey and fresh squeezed orange juice.
- 4 Tablespoons of Olive Oil
- 1/2 Cup of Orange Juice (Fresh Squeezed)
- 2 Tablespoons of Deli Mustard
- 2 Tablespoons of Honey
- 1 Package of Spinach
- 1 Avocado Sliced
- 1 Tablespoon of Everything Bagel Seasoning
- 1 Tablespoon of Sliced Almonds per salad
- 1 Tablespoon of Dried Cranberries per salad
- 2 Tablespoons of Goat Cheese
Whisk olive oil, mustard, honey and orange juice together. Refridgerate until ready to use.
Slice Avocados and crumble the goat cheese.
Sprinkle everything bagel seasoning on Avocados.
Add spinach to a bowl, pour on salad dressing, add goat cheese, avocado slices, cranberries and almonds. Enjoy!
Adjust ingredients based on if you are making a single serving or a main dish for several people.
