One of my absolute favorite side dishes right now is Turmeric Zucchini and Squash! My brother first made these for us and I've been making a similar variation ever since. I've never been a big fan of zucchini or squash until I had it cooked like this. The veggies are sliced thin and soak up all the seasoning like it was meant to be. You probably already have most of the ingredients on hand and just need to pick up the fresh vegetables to make this tasty dish. Grab all the details below! Turmeric Zucchini and Squash
Turmeric has been used for thousands of years as a spice and medicinal herb. The main ingredient, Curcumin has powerful anti-inflammatory effects and is an antioxidant. It's also quite tasty. If you've ever had a yellow curry, this is what makes it that bright yellow color. I really like this spice to add flavor to these veggies. Mark and the kids don't love turmeric as much but they will eat this as it is light in flavor.
This recipe is fairly simple to make. First, slice half an onion and add it to a skillet with olive oil. Then slice veggies into thin pieces. Add all the veggies to the same pan. I like to add the onions first to get a little caramelization going.
Cook all the veggies on low to medium heat for about 10 minutes. Then add in the garlic, liquid aminos and turmeric. Stir and cook another 10 minutes or until veggies are softened.

Ingredients
- 3 Tablespoons of Olive Oil
- ½ Onion, Sliced Thin and Cut in Half
- 2 Zucchini
- 2 Yellow Squash
- 1 Teaspoon of Turmeric
- 1 Tablespoon of Chopped Garlic
- 2 Tablespoons of Liquid Aminos (Or Soy Sauce)
Instructions
- Add olive oil and onion to a pan to saute on medium heat
- Slice zucchini and squash thin
- Add veggies to pan and cook 5-10 minutes
- Add turmeric, garlic and liquid aminos
- Cook an additional 10 minutes or until veggies are softened
