Salsa Verde Chicken Enchiladas

Since the new year started I have been trying to eat healthy(er). I have been doing really well and attending the gym pretty regularly. Today I decided it was time for something hearty!

salsa verde chicken enchiladas recipe

I didn’t think I even liked salsa verde until I had it recently with tacos. After that I have been thinking about what else I could do with it. I saw a jar when I was shopping at Trader Joe’s and decided to make Salsa Verde Chicken Enchiladas. I had pretty high hopes for it to turn out fabulous… and it really did! I really thought about just using the salsa as the sauce and quickly realized that it would be too much. So, I made a white sauce to blend in with it. MMMmmm.

After making the sauce just use it how you would any enchilada sauce and roll up the tortillas with your favorite toppings. I added chicken and mozzarella cheese.

Enjoy!
