These cream cheese pickle roll-ups are the ultimate kids lunch idea! Our kids have always loved tortilla roll-ups and they love them even more now that I've added pickles.
If you have our Cooking With Kids cookbook, you've seen our Turkey Roll-Ups which include cream cheese, lettuce, turkey, cheddar and olives. This new recipe includes cream cheese, ham, cheddar and pickles!
The kids are obsessed with pickles and add them to everything these days. I'm super excited to be working with SuckerPunch to bring you this fun recipe. Their sliced pickles are not only packaged in amazing snack bags, they also pack quite a punch in flavor.

How to Make Pickle and Cream Cheese Roll-Ups
Pickle and cream cheese roll-ups are super simple to make, yet amazingly delicious. First, roll out your tortilla and spread a good layer of cream cheese on the top.
Next, build a layer of pickles in one row. Sprinkle on a little shredded cheese. Then add a slice of ham rolled up in the middle.
Then take the piece of the tortilla closest to the pickles and roll all the way to the other side to seal nicely with the open space of cream cheese. Slice the roll-ups into half inch pieces.

Grab and Go Snack
There are a few ways you can arrange the roll-ups. You can also make the pickle cream cheese roll-ups for a quick grab-and-go snack.
You can set them side by side or stack on top of each other. Sometimes, I don't slice them at all and they enjoy them like a burrito. I like that these have the sliced pickles so there's a good combination of flavors in each bite.
