First, get out all of the ingredients and slice the veggies thin. I added avocado to these too giving it some extra creaminess and that So Cal spin.
How to Make Greek Pita Sandwiches
Cook the ground lamb with a bit of cumin and garlic powder. You can omit the meat if you're looking for a vegetarian option. First, start with the lettuce to fill the pita and give it a good hold for the remaining items. Next, add the meat and cucumbers which are the heaviest items so it helps to add those in first. Sprinkle on all the remaining veggies. Top with feta and sour cream. You can also use Tzatziki sauce if you prefer. The flavors of the cucumber and red onion blend in so well with the sour cream that you don't even need it though.
The pita bread may need to be cut in half, depending on the kind you are using. Slice right down the middle to open each piece up and fill it with ingredients.
Seriously, how pretty are these sandwiches?!
