Easy Orange Chicken with Rice Noodles

People are cooking at home now more than ever. California is under a Stay at Home order due to COVID-19. We are still able to shop at grocery stores for our essentials and pick up take out from our local restaurants that are open. There is a lot going on and I’m finding comfort in cooking and being home with my family. Easy Orange Chicken with Rice Noodles

The first thing you’ll want to do is boil a pot of water for the rice noodles. Next, heat up the Crazy Cuizine Mandarin Orange Chicken. Add olive oil to a pan and sauté for 18 minutes. While this is cooking, you can prepare the other items (below). To finish the orange chicken, add the sauce pack and combine for one minute.

Easy Orange Chicken with Rice Noodles

I picked up the Thai Kitchen Rice Noodles at Costco. This is a large bag, so I used about 10oz (or two handfuls). Boil the noodles according to the package instructions. You could use any noodles you have for this recipe. 

Noodles with Chicken Dinner

Next, quarter the baby carrots lengthwise, or slice regular carrots into thin pieces. If you don’t have carrots, you can use bell peppers, broccoli or cauliflower. Then thinly chop your kale. If you don’t have kale, you can use spinach or any other thick greens. Grab the full recipe below!

Easy Orange Chicken with Rice Noodles

Ingredients

  • 1 Package of Mandarin Orange Chicken. I used Crazy Cuizine fully-cooked frozen chicken
  • 1 Package of Rice Noodles
  • 1/2 Cup of Baby Carrots, quartered lengthwise
  • 1/2 Cup of Finely Chopped Kale
  • 2 Tablespoons of Olive Oil

Instructions

    1. Bring 6 cups of water to a boil in a medium saucepan.
    2. Cook Mandarin Orange Chicken for 18 minutes on Medium heat in a large skillet with 2 tablespoons of olive oil. Stiring occasionally.
    3. Stir in sauce packet, carrots and kale to combine with the chicken for one minute.
    4. Cook Rice Noodles for 8-10 minutes
    5. Combine Chicken and noodles or serve chicken on top of noodles.
