I went on a really big health kick over the summer, then I went on a big ‘eat whatever I please’ kick. I have since realized this was a bit extreme and finally found a “healthy” balance. I love all kinds of food. I do feel best though when I eat healthy food most of the time with a mix of not so healthy foods here and there. I do love me some sweets too and have had my fair share of halloween candy this week. I felt the need to eat something refreshing and came up with a super simple cucumber avocado toast which satisfies all of my odd cravings for food! I know avocado toast has been all the rage in the last year or so but I wanted to make one that had a bit of crunch in it. I sliced up some english cucumbers and a large avocado to get started. (I was so excited to see large avocados in the store again!)

I topped a slice of wheat toast with mayo then added the slices of cucumbers in a row. If you’re looking for a healthier mayo, try Primal Kitchen.

Next, add the avocado slices then season with salt. I used a black truffle infused salt from Hampton Salt Company which made it extra tasty but you can use any salt you’d like.

Cucumber Avocado Toast

Ingredients

  • 1 cucumber
  • 1 large avocado
  • 2 pieces of wheat bread
  • 1 tablespoon of mayo
  • Salt
  • (Makes 2 slices of toast)

Instructions

  1. Peel and slice cucumbers into thin slices
  2. Cut avocado in half than into thin slices
  3. Toast bread on medium heat
  4. Spread mayo onto toast
  5. Top with a layer of cucumber slices
  6. Top with a layer of avocado slices
  7. Season with salt

  5. I recently became a huge fan of avocado. Not only do I like the taste but I use them for the various health benefits as well. You can use it in everything! My favorite breakfast on the weekend is similar to yours. I toast one slice of whole grain bread, spread fresh avocado over the toast, and top with a fried egg. Delicious!
