    Summer Sides: Mexican Corn Salad

    Since we got our “Camper Van” we have been doing a lot more camping and summertime cooking. Last week we stayed at Santee Lakes Campground. I brought a bunch of yummy snacks and meals but my favorite side dish I made was a super tasty Mexican Corn Salad. I served it up for lunch on Saturday with some tasty Hebrew National All-Beef Franks. The kiddos loved it!

     Mexican Corn Salad is really easy to make. First, I had Mark grill up a few ears of corn on the BBQ. Once it cooled off, I cut off all the kernels and poured them in a bowl. I added cheese, fresh lime juice, mayo, chili powder and salt. This super simple summer side dish really packs a punch of flavor and tastes awesome with hot dogs and strawberries.

    This type of meal is really easy to make especially while camping and it fills the kids up. I love serving simple and tasty meals while camping. After our meal, we are headed to the pool to soak up the sun and stay cool.


    Mexican Corn Salad
    4-5 ears of corn
    ¼ package of white Mexican cheese
    ½ lime
    ½ teaspoon of chili powder
    ¼ cup of mayo
    Salt & pepper to taste

    Grill corn, cut corn off the cob, stir in remaining ingredients, chill, serve

      Looks delicious! I can see eating that with a Tijuana Dog - a hot dog wrapped in bacon and topped with guac, pico, jalapenos, pineapple.... I'm getting hungry now.
