If you're looking for a fun Easter Dessert, you're going to want to make these Peep Easter Bunny Cupcakes! These delicious vanilla cupcakes are covered in cream cheese frosting, dipped in green coconut “grass” and topped with Easter Bunny Peeps!
Enjoy these tasty treats during your favorite Easter celebrations. I love a fun and festive holiday dessert but I love them even more when they are easy to make. The kids LOVE peeps and I love how adorable they are as cupcake toppers!

How To Make Peep Easter Bunny Cupcakes
Peep Easter Bunny Cupcakes are actually really easy to make, which I love for a dessert. I used a white cake mix for the cupcakes. First, make your cupcakes according to the package directions and then let cool.
Make a cream cheese frosting made from butter, cream cheese, vanilla, salt and powdered sugar (full recipe below). Next, frost the cupcakes with a butter knife.
Make the grass by adding the coconut to a plastic sandwich bag and adding green and yellow food coloring. Seal the bag and mix with your hands until the coconut turns a grass green.
Lastly, stick a toothpick or short skewer stick into the bottom of a peep and then push into the top of a cupcake. Repeat for all cupcakes!

Peep Easter Bunny Cupcakes
Make the most adorable Peep Easter Bunny Cupcakes for your holiday celebrations!
Ingredients
- Classic White Cake Mix
- 1 Cup of Water
- ½ Cup of Oil
- 3 Eggs
- ½ Cup of Unsalted Butter, room temperature
- 8 oz Cream Cheese, room temperature
- 1 teaspoon Vanilla
- ¼ teaspoon Salt
- 3 Cups of Powdered Sugar
- 1 Cup of Shredded Coconut
- 4 Drops of Green Food Coloring
- 3 Drops of Yellow Food Coloring
- (2) 3 oz Packages of Bunny Peeps, 1 Yellow, 1 Pink
- Toothpicks
Instructions
- Preheat oven to 350F.
- Make your cupcakes according to the package directions and then let cool. I added the water, oil and eggs to the package to stir then spoon into cupcake liners in a cupcake pan. Bake for 17. minutes.
- Make cream cheese frosting made from butter, cream cheese, vanilla, salt and powdered sugar.
- Frost the cupcakes with a butter knife.
- Make the grass by adding the coconut to a plastic sandwich bag and adding green and yellow food coloring. Seal the bag and mix with your hands until the coconut turns a grass green.
