OMG! These coconut peanut butter bars are so delicious! These whole ingredient bars are the perfect indulgent treat with a coconut spin.
I've always loved peanut butter cups, but after making peanut butter bars at home, it's hard to go back. I love that these use minimal ingredients and flavors that are insane.

Ingredients in Coconut Peanut Butter Bars
I came across Coco Mo organic products at Expo West in Anaheim recently and fell in love with their peanut butter. I knew I would be making a tasty dessert with this peanut butter the minute I tried it. For this recipe you'll need:
- Coconut Peanut Butter - or any nutter butter of preference
- Coconut Oil
- Dark Chocolate - or milk chocolate
- Coconut Peanut Butter Powder - or peanut butter powder. You could also use protein powder.
- Sea Salt

How to Make Coconut Peanut Butter Bars
These delicious bars are super simple to make. You're going to need small chocolate or granola bar molds.
I found this one at Michael's, and you can also find them on Amazon. Silicon molds make baking sweets and desserts so much easier! I've recently picked up a few and can't wait to make more recipes for you.

Melt the Chocolate
First, sprinkle a little sea salt into each chocolate mold. Then, melt your chocolate with coconut oil in a glass dish in the microwave for 1-2 minutes, then stir.
Next, pour the chocolate into the molds. I just eyeballed it and made enough for 8 bars. You want to save some of the chocolate for the top. Place the chocolate in the freezer for a few minutes, while moving on to the next step for the peanut butter bars.

Pottery Piece for Serving Tray
If you're wondering about the serving tray I used, I made it in my pottery class!
Kyla, my mom and I have been taking pottery class at Creative Academy San Diego in Liberty Station for the past few months.
We have all loved doing pottery so much. I'm even teaching a pottery and painting class at Blissful Seeds and it's been so fun!

Combine Peanut Butter and Powder
While the chocolate hardens in the freezer, mix the peanut butter and the coconut peanut butter powder. Melt in the microwave for 1 minute and stir.
Pour on top of the chocolate layer and set back in the freezer. Pour the last layer of chocolate on the peanut butter layer and freeze one last time for a few minutes.

I'm so happy to find fun uses for the pottery pieces I've been creating. I love the simplicity combined with the rough texture of a handmade item.
I hope you enjoy these coconut peanut butter bars as much as us! These bars are a perfect evening treat or a fun dish to share with friends. xo, Bri
