Oh yes! This Strawberry and Apricot Salad with Goat Cheese, Lime and Mint is my new favorite summer fruit salad! I love the simplicity with the vibrant color and flavors this easy side dish has to offer. It can be made in less than 5 minutes and is a beautiful dish for any day!
One of my favorite parts about grocery shopping is strolling through the produce aisles to see what kind of ideas pop up for new recipes. I haven’t been doing much strolling since the pandemic started until I tried shopping at Trader Joe’s this week. Their store seemed to be set up in a way that felt more open and browsable. They use tape on the ground and encourage guests to travel in one direction in the store. I was more comfortable and able to look around more than just run in and grab what I needed.
Strawberry and Apricot Salad
First I grabbed strawberries and just knew I had to make something different with these. Once I saw the apricots I decided a fun summer salad was on this week’s menu! I grabbed some mint and limes to create a dressing. I love to see all the bold colors together.
To get started with the recipe, first make the dressing. Mix equal parts chopped mint, honey and lime. I made mine with about 1/4 cup of each and had plenty of dressing left over.
You really don’t need a lot of dressing since the flavors are so strong. You can also use the leftover dressing (or syrup) for cocktails! I have a fun Blood Orange cocktail I’ll be mixing up soon using this! Once the dressing is mixed, let it sit in the fridge while you create the salad. I sliced the fruit and mixed it together. Then just drizzle the dressing on top and sprinkle on some goat cheese. That’s it!
