St Pattys Day Lemon Lime Bites

In an effort to make something festive for St. Patty’s day I went for a dessert. Of course. Lemon Lime Bites – a dessert I have never attempted turned out quite tasty.

If you are looking for something chewy, moist, light and fresh – you have found the right dessert. These St. Patty’s Lemon Lime Bites are just that. I think next time I would just garnish with a lime or lemon but I thought the bright green cherry was fun too.

St. Patty’s Lemon Lime Bites

3/4 cup flour
3/4 cup sugar
1/4 teaspoon salt
1/2 cup butter, softened
2 eggs
2 1/2 teaspoons lemon zest
2 tablespoons lemon juice
1 tablespoons lime juice
2 drops of green food coloring
Green Cherries for garnish
Powdered sugar for sprinkling

Preheat oven to 350
Mix butter and sugar until fluffy. Add eggs, one at a time until completely incorporated. Add lemon juice, lime juice, food coloring and zest. Mix until incorporated. Mix in flour and salt with a wooden spoon.

Pour into a greased 8×8 inch pan and bake at 350 degrees for 25 minutes.

Sprinkle powdered sugar on top. Add cherries for garnish

  1. These look so good! I have never celebrated much on St. Patty’s Day. Although now with my little guy, it makes it easier to enjoy! Today, we are putting leprechaun traps throughout the house. Too fun!
