Ever since I bought the large bag of rice noodles at Costco, I've been coming up with new noodle dish recipes! I'm loving this Easy Mongolian Beef recipe that uses only a few pantry items like rice noodles, soy sauce, sugar and minced garlic. This rice noodle based, ground beef dish is super simple, comes together in about 20 minutes and has tons of flavor! I topped it off with a sprinkle of chopped green onions and Everything Bagel seasoning. Yum!
First things first, boil a pot of water for the rice noodles. Brown the ground beef in a separate pan on medium heat. Cook the noodles based on the package directions. I cooked mine for 10 minutes then drained the noodles.
Mongolian Beef Sauce
I've been experimenting with the sauce on this recipe and I've found what works for us. It's easy to adjust to make more or less sauce as needed. It's mostly a combination of salty sweet with the soy sauce and sugar. Most recipes call for brown sugar but I'm currently out so I used ¼ cup of sugar with a tablespoon of maple syrup. I'm sure this sounds so weird if you've never made this. Once you pour it into the ⅓ cup of soy sauce, it evens out the salty sweet to a really yummy flavor!
I like to add a good tablespoon of minced garlic to the sauce too!
After you make the sauce, you can chop up the green onions so they are ready.
Add the sauce to the beef and stir for one minute. Then add the noodles to combine. Pour the Mongolian Beef into bowls and top with chopped green onions and a sprinkle of Everything Bagel Seasoning if you have it. You could also sprinkle with sesame seeds. Grab the full recipe below!
