I love trying new concoctions in the kitchen. This dragon fruit champagne cocktail is so fun and colorful! I used Pitaya Plus dragon fruit smoothie packs to create this tasty drink. A perfect pink cocktail that is awesome for any celebration. This super easy and refreshing dragon fruit champagne cocktail recipe is below!
What is Dragon Fruit
First, let's talk about dragon fruit. The fruit itself is so beautiful with its bright pink outer ring, white center and black seeds. Dragon fruit is rich in fiber and antioxidants. It can offer health benefits, like gut and immune support to improved circulation and chronic disease prevention. Dragon fruit is typically grown in Asia, Mexico, Central America, South America and Israel. Dragon fruit comes from cactus vines and are ready to harvest when their flesh is yellow or pink.
On to the cocktail! This dragon fruit champagne cocktail is super easy to make. All you need is dragon fruit smoothie packs, fresh lime juice, mint and champagne. I used brut so you could really taste the flavor of the dragon fruit and lime.
The smoothie packs are pretty solid when you take them out of the freezer so I recommend putting them in a water bath to let them thaw out a bit. About 5-10 minutes in a tub of water should work. Then cut open the package and scoop out one tablespoon into the bottom of your glass. I used short wine glasses but any glass will do.
Making a Dragon Fruit Cocktail
Then pour the champagne right on top of the dragon fruit. Squeeze a bit of lime into each cup and garnish with mint. If you want more of a mint flavor you can muddle it in. I liked the taste of the dragon fruit with the lime and just a hint of mint. And there you have it! A simple, yet pretty cocktail for any occasion!
I love the bright pink against the lime green colors. It really makes the drinks pop. These would be perfect for a spring or summer afternoon with the ladies.
