I love creating dishes with vibrant colors and unique flavors. Chopping the veggies, seeing the colors come together and creating something new is so exciting. I’ve been experimenting with different flavor combinations and salad ingredients. This Tomato Potato Salad idea was created after trying out these tasty Little Potatoes sent over in a blogger box from New Hope Network. This salad includes the tasty potatoes as the base and vibrant veggies added in for a delicious Tomato Potato Salad!
Eat Your Veggies
First of all, when I get too busy, I really slack on eating veggies. It sounds so counter productive since I know veggies really help to give me energy and feel my best. I’m incorporating more veggies in my everyday dishes and snacks. This Tomato Potato Salad includes tomatoes, snow peas, red onion and green olives!
Also, I have always enjoyed veggies but it’s taken me some time to find the best ways in which I like to enjoy them. There aren’t too many that I like to eat completely plain. This salad adds just enough seasoning and oil to blend the flavors together making it a tasty dish on its own or added as a side dish to a meal.
Note: These garlic parsley flavored Little Potatoes are so tasty all on their own! Since I’m adding in more veggies to my routine, this is a really easy way to do it! Also, I hardly ever use snow peas in my dishes and was pleasantly surprised how much crunch, flavor and color these brought to the salad. A must add for sure!
