I can’t believe summer is coming to a close and fall is just around the corner. My kiddo will be starting her last year of preschool and simple weeknight dinners are ahead. One of my go-to side dishes for fall is pasta salad. I often make a pasta dish on Monday nights and use the leftover pasta on Tuesday night to create a refreshing pasta salad. This time, I’m sharing our meal from a couple weeks ago, which included tasty Hebrew National® Kosher hot dogs grilled to perfection.
I typically mix up the type of pasta I make during the week. I get sick of plain old spaghetti and meat sauce, so each week I grab a different type of noodle, sauce and protein. Last week I made Rigatoni pasta with beef ragu. This one is definitely a favorite. And the best part is I always have leftover noodles for my favorite pasta salad the next day.
Fall Feta Pasta Salad
1 cup of cooked pasta
¼ cup shelled cooked edamame
¼ cup chopped red bell peppers
10 chopped sundried tomatoes
10 chopped cherry tomatoes
1/2 chopped english cucumber
4 Tablespoons of Italian dressing
1 Tablespoon of Mayo
2 Tablespoons crumbled feta cheese
Salt & Pepper to taste
Slice pasta into bite size pieces (if your pasta is large).
Add all veggies, dressing and seasonings then stir.
Top with feta cheese.
Refrigerate 1 hour and then serve.
